Prickly Pear Oatmeal

1 cup oatmeal

1 cup prickly pear

1 tsp dried tarragon

Cook oatmeal to desired consistency and slice or chop the prickly pear. Swirl the tarragon in the oatmeal and top the oatmeal with the prickly pear.

Beautiful and delicious!

What is prickly pear? Prickly pear is the fruit of one of about 150 species of cacti native in nearly every state east of the Mississippi, I believe.

I love learning about native plants. If you have the time you can enjoy a wonderful day in the fields foraging for the cacti, or you can grow it easily in your garden. Native plants, and specifically cacti that don't need much water will be a treat.

When I first started cooking different vegetables I joined Misfits Market. They would occasionally send prickly pear and I think Trader Joe stocks it.

How does it taste?

Prickly pear when ripe (red) are sweet fruits filled with many edible seeds. If you like pomegranate you would probably enjoy it.
